CAULIFLOWER MASH
My partner really dislikes cauliflower, but I have persuaded him to try my cauliflower mash. He is now an enthusiastic convert. This very simple dish can be made in 15 minutes and is a wonderful accompaniment to the usual beef, pork, lamb, chicken and fish dishes that are served with the traditional mashed potato. This simple, but tasty and satisfying dish has only 5.2g net carbs per portion.
- 400g Cauliflower florets - Avoid the heavier parts of the stalk
- 1 tblsp Salted Butter
- 1/4 tsp Ground Black Pepper
Method
- Cut the cauliflower by removing the outer leaves and cutting the florets from the main central stalk. Dispose of the thick central stalk, but place the cauliflower florets in a medium-sized pan and cover with boiling water.
- Bring to the boil and simmer for 8 minutes or until the florets start to break apart.
- Carefully drain off all the water and return the florets to the pan
- Add the butter and black pepper and simmer to boil-off the residual liquid in the cauliflower.
- This could take 10 minutes. Keep stirring with a wooden spoon until the cauliflower is thick like mashed potato and starts to stick to the pan. It's now ready!
Variations
You can add variation and interest to your cauliflower mash by adding any of the following ingredients and depending on what you are serving the mash with. Remember to adjust your net carb count for any additions.
- Chopped fresh parsley
- Chilli flakes
- Grated cheese
- Turmeric
- Finely chopped spring onion
