Cauliflower Couscous
I've created this little side dish as an accompaniment to my Moroccan Lamb Tagine, as an alternative to cauliflower rice. Easily made within 10 minutes and incredibly versatile if you wish to add traditional vegetables and seasonings to it as a more substantial meal. As a simple cauliflower couscous, this recipe has just 12.7g net carbs and can serve up to 4 people with 3.2g net carbs per serving
Ingredients (For 4 Servings)
- 400g Cauliflower Florets
- 1 cup of boiling water
- 25g Salted Butter
- 1/2 tsp Turmeric
- 4 Chives chopped
Method
- Heat the water and butter in a frying pan until lightly boiling. Add the Turmeric and mix well.
- Add the cauliflower and stir until softened and the water has evaporated. This will take 6-8 minutes.
- Don't overcook or you'll end up with cauliflower mash!
- Serve in a deeply warmed dish and sprinkle with chopped chives
