Poached Egg, Avo & Bacon on Toast

POACHED EGG, AVO & BACON ON TOAST

This has become one of our favourite quick-and-easy suppers. It's tasty, healthy and incredibly filling and satisfying.  At only 5g of carbs per serving, it's a lovely choice for a quick lunch or supper.

Ingredients (4 Servings)

  • 4 Slices        Seeded Loaf (Toasted until crispy)
  • 1 medium     Avocado, sliced
  • 4 Large         Eggs
  • 8 Rashers     Streaky Bacon
Method
  • Fry the bacon in a knob of butter until brown and crispy
  • Toast your slices of bread until your required crispness and colour is achieved
  • Slice the avocado into 12 lengthways slices (or you can just mush it up if preferred)
  • Poach the eggs in boiling water for 2-3 minutes (until the preferred level of cooking is obtained) and drain them well with a slotted spoon
To Assemble
  • Place the toast on the plate and drizzle 2 tsp of bacon fat on top (instead of buttering)
  • Top with the slices of avocado
  • Top with a poached egg
  • Top with two rashers of streaky bacon
  • Serve immediately

NOTE: I OFTEN ADJUST MY RECIPES WHEN I FIND NEW INGREDIENTS AND WILL UPDATE THE RECIPES ON MY BLOG ACCORDINGLY (RATHER THAN PRODUCING ANOTHER RECIPE), SO PLEASE ALWAYS CHECK BEFORE MAKING.
