POACHED EGG, AVO & BACON ON TOAST
This has become one of our favourite quick-and-easy suppers. It's tasty, healthy and incredibly filling and satisfying. At only 5g of carbs per serving, it's a lovely choice for a quick lunch or supper.
Ingredients (4 Servings)
- 4 Slices Seeded Loaf (Toasted until crispy)
- 1 medium Avocado, sliced
- 4 Large Eggs
- 8 Rashers Streaky Bacon
Method
- Fry the bacon in a knob of butter until brown and crispy
- Toast your slices of bread until your required crispness and colour is achieved
- Slice the avocado into 12 lengthways slices (or you can just mush it up if preferred)
- Poach the eggs in boiling water for 2-3 minutes (until the preferred level of cooking is obtained) and drain them well with a slotted spoon
To Assemble
- Place the toast on the plate and drizzle 2 tsp of bacon fat on top (instead of buttering)
- Top with the slices of avocado
- Top with a poached egg
- Top with two rashers of streaky bacon
- Serve immediately
