HERBY CHRISTMAS STUFFING
Using keto bread to make the stuffing for your Turkey means that you don't have to miss out on this wonderful, traditional, Christmas accompaniment. This lovely stuffing will only give you 1g of carbs for each loaded tablespoon serving.
Ingredients - For roughly 20 servings
- 2 Rolls Keto Bread (see Simply the best bread rolls in earlier blog)
- 125ml Double Cream
- knob Salted Butter
- 225g Minced Pork
- 100g Diced Bacon
- 1/2 White Onion (finely chopped)
- 1 clove Garlic (finely chopped)
- 2 Celery Stalks (finely chopped)
- 50g Pecan Nuts (finely chopped)
- 1 tblsp Parlsey (fresh - chopped finely)
- 1 tblsp Sage (fresh - chopped finely)
- 1 tblsp Thyme (fresh - chopped finely)
- 1 medium Egg - whisked lightly
- Salt & Pepper
Method
- Preheat the oven to 175*C
- Break the keto bread rolls into small pieces in a large bowl
- Pour the cream over the bread and set aside
- Sauté the onion and garlic in the butter until softened
- Add the pork and the bacon and fry-off until cooked through
- Add the celery and continue to cook through for 5 minutes
- Add the herbs and nuts and stir through well. Remove from the heat
- Stir the whisked egg through the bread and cream mix and combine well
- Stir the meat and herb mixture into the bread mix and combine well
- Place the stuffing mix in a buttered dish and bake in the centre of the oven for 30 minutes
