Cottage Pie

COTTAGE PIE

This lovely winter dish has been given the keto treatment by using cauliflower mash.  When I first tried it on my family, they hadn't even realised it wasn't potato mash! It's just 10g of carbs per serving, but with some steamed or creamed spinach, you'll not need much else.
Ingredients - For 4 Servings
  • 1/2                White Onion (chopped)
  • 2 cloves        Garlic (chopped)
  • knob             Butter
  • 450g             Minced Beef
  • 150g             Chestnut Mushrooms (chopped)
  • 1 tblsp          Light Soy Sauce
  • 150ml          Water
  • 1 tsp             Dried Thyme
  • 500g             Cauliflower Florets
  • knob             Butter
  • 50g               Grated Cheese
  • 1 tblsp          Grated Parmesan
  •                      Salt, Pepper & Nutmeg to taste

Method
  • Sauté the onion and garlic in a knob of butter
  • Add in the minced beef and fry it off
  • Add the chopped mushrooms and allow them to cook down into the mince
  • Add the soy sauce, water and season with Salt, Pepper and dried Thyme to taste
  • Simmer for 30 mins to soften the mince and add a little more water if it becomes too dry
  • Meanwhile, simmer the cauliflower florets in a pan of boiling water for 10-12 minutes or until the florets are soft, but still firm (and definitely not soggy).  I always place them stalk down and florets up in the pan so the stalks are cooked in the boiling water and the florets are steamed
  • Drain them well and turn into a large bowl
  • Add the second knob of butter, the cheese and parmesan and whisk (slowly) until a nice soft mash is formed.  Season with salt, pepper and nutmeg to taste
  • Place the cooked mince into four individual oven-proof dishes (or one larger dish) and top the mince with the mashed cauliflower.  I quite like to pipe the mash onto the top of the pies to make them look nice
  • Add extra grated cheese on top of the mash, if desire, and bake in the middle of the oven for 30 minutes until browned and piping hot
Serve with steamed or creamed spinach or roasted green beans with parmesan.  Enjoy!
